Curried Sweet Potatoes & Lentils

                                                                                                                       

                1 T olive oil

                1 medium onion, chopped

                2 minced garlic

                1 T. curry powder

                3 med. Sweet potatoes – peeled, cut into 1"

                chunks

                1 c. lentils, rinsed and sorted

                1/2 c. long grain white rice

                1/2 t. salt

                1 14 1/2 oz. Vegetable broth

                1/4 c. loosely packed fresh cilantro

                Heat oil and saute onion and add garlic, curry.

                 Cook 1 min.  Stir in sweet potato, lentils, rice,

                salt, broth, and 2 1/4 cups water.  Boil then

                turn to low heat and cover, simmer 30 min.  Let

                 stand 5 min.  Sprinkle with cilantro.
