Broccoli & Walnut Penne

                12 oz. penne

                4 cups broccoli florets

                1/2 lb. Sliced mushrooms

                6 cloves garlic, minced

                2 T. olive oil

                1 c. tomato sauce

                2 T. fresh oregano (2 t. dried)

                1 T. fresh thyme (1 t. dried)

                Salt & pepper to taste

                Vegan parmesan cheese

                1/3 c. toasted walnuts

                Cook pasta.  Drain.  Steam broccoli.  Drain.  In

                a skillet, saute mushrooms and garlic in oil. 

                Add tomato sauce, thyme, oregano.  Add pasta

                 and broccoli.  Cook for 3 -4 minutes to heat. 

                Add salt and pepper.  Toss with cheese and

                walnuts.
